#1...Evaporated Milk! Use 1 cup of regular milk, add 1 tspn of sugar, 1 1/2 tspn cornstarch. Mix well on low/medium heat just until it thickens or simmers. Make sure not to boil it!

#2 Buttermilk Substitute: Using a measuring cup, place 1 tbsp of white vinegar in it. Add milk until 1 cup. Let sit for 5 minutes and use!
